This was really tasty and not difficult to make (although it does take a little time due to spreading and folding and frying, etc.), and I will make it again. Several things I discovered, mostly personal taste, but unless you are very heat-resistant, putting an entire can of peppers in the pan is a little overkill... as I said, personal taste because my husband loved it and the heat. I've noticed the reviews re: the tortilla making a wet mess, which is what I figured when I was going to make the recipe. I used the thicker tortillas available in refrigerator sections, which can be fried or left plain for this dish. You will always have soft tortillas in a casserole, but the thickness makes a huge difference as far as absorbing fluid and becoming mushy. You should also drain the tomatoes as there is a little too much fluid in the pan, fighting against your thick tortillas! I used 8 oz of cream cheese because it was too little when spread on the tortillas- make sure they are warm or you will have clumps of cheese in various places and none in others. I also put more Monterey Jack on than called for. Note that almost everything I've mentioned is to my personal taste so it has nothing to do with the original recipe being deficient.
