The only adjustments I made were to leave the skins on the potatoes, dice the carrot and steam the broccoli florets and diced stem separately (I don't enjoy mushy overcooked broccoli) and add them at the end with the ham and cheese. Delicious soup. I did cut the recipe down enough to make only two quarts, and added no salt because I figured there was enough of that in the bouillon, ham and cheese (and I was right). Used two cups of thawed O'Brien potatoes, and added 2 teaspoons each of freshly chopped parsley and basil. That's it. No other changes, which is unusual for me. The only thing missing was the bread bowls, which I wanted but didn't have time to make, so served with sour dough rolls. Yum! Very filling. Definitely will make this again. 1\/20\/23: This soup is excellent. The only changes I made were as follows: I cubed the carrots (tiny cubes in an alligator chopper) rather than grating them because I love carrots in my soup. I had way more veggies than the 3 cups of water could handle, so I added chicken broth to cover the veggies before cooking them. Even with all that extra moisture, I kept the roux ingredients the same and the soup still thickened beautifully. I hand-cubed a frozen ham slice into 1 cup of cubes, but next time, I will probably add 2 cups of cubed ham. It would not hurt to add more cheese either. It's all a matter of taste. I will be adding this soup into regular rotation. It is that good.<\/p>

Saw your recipe the other day I decided to try it. We just had a bit more snowfall here in Ontario and it was the perfect recipe for a blister day. I followed the recipe almost exactly as written. The only change I made was I added a bit more salt and pepper I use chicken broth instead of water. I'm sure my vegetables were a little more than what the recipe called for but it worked out great. I did add approximately 3 tbsp. of Knnor's chicken liquid bouillon. Had leftover ham that I diced up. Will add some garlic and herbs to boost up the flavor a bit as others have suggested. My one suggestion would be for the author to make suggestions to other spices and herbs we could add. A lot of people who read recipes are seasoned cooks but a lot are nubbies and need guidance. I am a seasoned cook and older but it took me approximately 45 minutes to 1 hour to chop all the ingredients. Thanks for the recipe.
