There's not much liquid left after freezing, and the noodles get pretty soft, so next time I'm making extra expressly to freeze, I'll cook it through the directions in step 1 then ladle half into a container and freeze. It is one of those meals that you look to eat after you have had a very tiring day. I changed the recipe a bit as I need it to serve 5 large servings plus lots of extra for another meal. Instead of adding two cups uncooked egg noodles I separately make a pound of egg noodles and add it in at the very end. I also add 1 can low sodium cream of chicken soup, a pinch of dried parsley, some extra frozen corn, and some fresh leaves off the bunch of celery for even more flavor in addition to adding the 2 chopped celery ribs. Having grown up in Lancaster County, PA, I am no stranger to chicken corn soup. Typically the entire chicken is boiled, cooled, and picked off the bone. The broth is used as the base and fresh corn cut off the cob, celery, parsley, and rivels (mixed flour and egg formed into small balls that are added last), and the chicken constitute the soup. The stock is usually heavily salted but adjusted as necessary. Most Amish have variations which include diced potatoes or noodles but carrots are typically not part of it. I made this recipe on a whim and it was just not the real thing; in fact I found it most unappealing. Amish use fresh ingredients, often what the grow or raise and canned creamed corn or bouillon cubes are simply not their go-to for this soup. Perhaps research would have helped Taste Recipes to know what homemade Amish chicken corn soup is really about.","CommentId":1,"DateRated":"03\/13\/2021 00:06","GUID":"8664e3e3c6b34fa1ba0b76731f59ca5b","MemberId":9925333,"Rating":1,"ScreenName":"Bonnie","SubmittedDate":"03\/13\/2021 00:06"},{"Comment":"Yummy soup! They would never start with bullion. A great Amish Chicken Corn Soup starts with cooked chicken. I actually use a good prepared store bought roasted chicken. Remove breast and save for chicken salad. Put the remaining chicken in chicken broth (preferred) or water and cook about 30 minutes ( if using a raw chicken 1 hour. I add a large yellow onion sliced in half (easier to remove), 3 celery stalks in chunks. Salt and pepper to taste. I have never seen carrots in this dish but go ahead. Remove chicken from bones. Strain broth. Chop onion and celery return to strained broth. Add fresh corn cut from cobs (5). Toss in a handful of wide noodles. (Original Amish used rivers.) 2 forked hard-boiled eggs and chopped fresh parsley. Now this soup has flavor and is much more in keeping with Amish cooking.","CommentId":6,"DateRated":"09\/10\/2020 21:19","GUID":"d595adbd08be46bf826703bb5ae545d9","MemberId":8965911,"Rating":2,"ScreenName":"Brenda","SubmittedDate":"09\/10\/2020 21:19"},{"Comment":"This is not country Amish chicken corn soup as I am from York\/Lancaster county and never would there be chicken bouillon cubes used, nor canned corn, nor noodles, nor carrots. This looks like a great soup and it is on my list to make, but I have a quibble--I grew up in Lancaster Co., PA, where the Amish still ride the roads in their buggies and this is not Amish Chicken Corn soup--as M.J. pointed out, the Amish would not start with boneless skinless chicken (they would use a left over roast chicken carcass); nor would they use creamed corn or noodles. True chicken corn soup has only corn in it as a starch (no noodles or potatoes), but the secret ingredient (as I learned in Home Ec and observed at many Fire Company dinners) is hard-boiled egg that has the white chopped and added to the soup and the yolks are mashed with broth from the soup to form kind of a slurry and added at the end.<\/p>","CommentId":27,"DateRated":"","GUID":"02f5d6f7a0364028a89f40497e73b97c","MemberId":7835402,"Rating":0,"ScreenName":"RebeccaSmKev","SubmittedDate":"09\/16\/2017 00:04"},{"Comment":"

This is the best. Served it at a church dinner & 2 people asked for the recipe. I made the whole recipe just as printed and froze until needed. It makes alot and freezes very well. I used 1 can of whole kernel corn & 1 creamed corn. I'm anxious to make it again & have in the freezer for easy meals.<\/p>","CommentId":50,"DateRated":"09\/16\/2016 10:03","GUID":"70E6FC2711564A710FE0F8C19BE29DA3","MemberId":718,"Rating":5,"ScreenName":"Lori35_IA","SubmittedDate":"02\/26\/2011 15:28"},{"Comment":"","CommentId":51,"DateRated":"02\/02\/2011 19:21","GUID":"516d4013bed14f74be16b5ca408885c1","MemberId":5342720,"Rating":4,"ScreenName":"mhafen","SubmittedDate":"02\/02\/2011 19:21"},{"Comment":"
