I've been making this for so many years after finding this recipe in a small Taste Recipes recipe magazine I bought at the grocery store.<\/p>
I use red bell pepper instead of pimento cuz that's what I had and have just made it that way ever since. It gives me a comfort food feel with not much work. It's good with biscuits too. I have also mad this as a freezer meal prep meal many times. Cut up the chicken and veggies, add spices & put in a freezer bag. Then the day you want to make it throw it in the crock pot either straight from the freezer or thawed from the night before, add the soup and it comes out the same as fresh. It has flavor to me so I don't understand people saying it has not enough flavor but I'm sure adding salt & spices would help. This recipe sounds wonderful, with just a little more spices & mushrooms as wmplpi stated below. My mother always served Chicken a la King over these little crunchy bird nests looking bowls, which I can't find anymore. I believe they were made with Chinese Chow Mein noodles and somehow shaped like a bowl, but I'm not sure. Whatever they were, they were delicious and the perfect way to serve Chicken a la King. I should have added some of the seasoning mentioned in other reviews, because I thought it was bland. The reason I am posting the review is that I thought, while reading the recipe, that it really didn't need to be cooked nearly that long, but I figured the preparers knew better than I did. They didn't. I'd imagine all that is needed is between four and five hours -- I'd guess closer to four. Like the attempt at 'holy trinity', onion, green pepper, and celery, but the proportions are off. Should be 2:1:1 ratio. Could also benefit from some dried herbs, and a couple of bay leaves. Cayenne doesn't add flavor -- only heat.
