The refreshing, partly sweet, partly tart taste of lemon drop cookies makes for a delightful treat any time of year. They’re a breeze to make, with just a handful of ingredients. You can leave them plain (they’re buttery soft, with a tangy lemon flavor just as they are), or add a lemon or vanilla glaze once cooled. Either way, they’re an unexpected but always welcome addition to your dessert table.

First, preheat oven to 350°F. Then, in a large bowl or stand mixer, cream together the butter and sugar until light and fluffy. Next, beat in the egg one at a time, then add cream and zest.

In a smaller bowl, combine the flour, crushed lemon drops, baking powder and salt. Gradually add this to the creamed mixture and mix well until combined.

Next, drop batter by rounded teaspoonfuls 3 inches apart onto greased baking sheets. Bake for eight to 10 minutes, or until edges are just lightly browned. Cool for two minutes, and then remove to wire racks.

You can store lemon drop cookies in a cookie jar on the counter, or in the fridge in plastic wrap or other airtight container.

At room temperature, these cookies will last up to 3 days. If stored in the fridge, up to 5 days.

You can make lemon drop cookies entirely gluten-free by replacing the all-purpose flour with your favorite 1:1 gluten free flour mix.

Yes. Lemon drop cookies are just as delicious warm as they are cooled.

These cookies are delicious on their own as a sweet treat, but they are also delightful in the afternoon with tea, with a mix of other holiday cookies or as a side to a bowl of homemade strawberry ice cream.

The bright flavors of lemon extract and lemon gumdrops make these simple lemon drop cookies a delightful treat. I did not have a lemon to zest, so I substituted it with the same amount of lemon juice. I used a teaspoon size cookie scoop, which gave me two dozen cookies. I used parchment paper to line my cookie sheets. I baked mine for 11 minutes and they were perfect. I used Lemonheads candy for the lemon drops. Try looking for them in your local dollar store which seems to have a large selection of candy. That is where I found mine. Some reviewers had trouble with these cookies so I will share my secrets to a great cookie: first USE PARCHMENT PAPER!!! I cannot say that enough! The recipe says to "grease" a cookie sheet...there isn't enough grease in the world that will prevent these cookies from sticking! Use parchment paper, and they will slide off your pan easily. Next, to get the candies the right size, first put them in a freezer-safe (it's thicker) zip lock bag. Smash them with a hammer. The candies actually cut through the bag. Once half smashed, put them in a food processor and pulverize them. I used the zest of one lemon for a double recipe along with the juice of half a lemon. It really added to the flavor. After baking, leave the cookies cool for about 2 minutes on the pan then transfer to a wire cooling rack that is COVERED WITH PARCHMENT PAPER. Do NOT put the cookies directly on the wire rack; they will stick. I even tried wax paper. The cookies stuck to the wax paper! Parchment is the way to go. Once I put that down, they slid off the pan and easily slid off the cooling rack. The cookies taste great and I will definitely make them again, but parchment paper is the key to a successful recipe.
@context":"http://schema.org/","@type":"Rating
{"@context":"http://schema.org/","@type":"Review
2015-12-17
@context":"http://schema.org/","@type":"Person
marlio
I tripled the recipe but only had a cup of crushed lemon drops so I added a half cup of Country Time dry Lemonade mix. I looked and looked for lemon drop candies but couldn`t find them so I bought 3 bags of fruit flavoured Life Savers (the ones that are larger than usual, individually wrapped) and got just the right amount of crushed candy. They are really, really good! I crushed the candy with a hammer, maybe I`ll try the blender next time...Mine also flattened somewhat, would it really prevent that to add a bit of flour?
