I hate all the liquid that gathers at the bottom of the salsa bowl so I do one extra step--I cut the ends off the tomatoes, slice them in half (horizontally), then squeeze out the juice, seeds and whatever pulp falls out. Once the other ingredients are prepared, I pulse the emptied tomato halves in a food processor until they are cut but chunky. Then I add everything else and pulse a few more times. It makes a more hearty salsa. A lot of reviews here say to take out the vinegar. I MUST DEFEND THE VINEGAR. I was trying to make salsa from a different recipe and it just felt like it was missing something. I've been making this since TOH first published it. I love that it doesn't call for cilantro. I'm not a fan. I only make 2 slight changes to the recipe: My bf doesn't like vinegar, so I use lime juice instead. Also, I don't seed the jalapenos (and I don't measure them... I just add the whole pepper), and I add closer to 1 tsp. of cayenne pepper because we like it extra spicy. I got this e-mail this morning and I was all ready to make plenty of fresh salsa so I just used the amounts here instead of in the last one I made. One of the jars is gone...eaten by my family already! I know from looking at the reviews that we all have our particular tastes and ingredients that we want in salsa but the most fun thing about making salsa is that it can have anything in it! In answer to a couple of other people, I always freeze some of my salsa. My husband has made this twice now (and he id NOT a cook). This time it's much better than the last (Lord only knows what he did then - this time he had my help). I peeled the tomatos (drop them in boiling water for about 45 seconds and they peel very easy), we used all red onions, lime juice instead of lemon, skipped the vinegar and oil as others had suggested and also substituted cilantro for the cumin, used ground pepper instead on cayenne and added 2 teaspoons sugar to cut the acid in the tomato.
