This is delicious! I make this at least once a month for my family. This was delicious and very easy. I cut the recipe in half by leaving out the chicken and using half the broth and rice. Also left out the peas and saffron as I didn't have any. I used Basmati rice. Admittedly, I am not an expert on paella and have only eaten the dish once before. I don't know that I would call it \"paella\" as my reference is more of a rich tomato-based broth with veggies, chicken, sausage, & shrimp served with rice. This recipe was more of a rice dish.
