quickly ripening bananas, from a few days to a few minutes to even to a few seconds (thank you, microwave!). Ripen the bananas in a day or two by folding them up into a brown paper bag and letting that natural ethylene gas do its thing.

If you need the bananas ripened in 15 minutes, preheat your oven to 250º, place your unpeeled bananas on a baking sheet, and bake until the skins have turned brown and the flesh is soft when you stick a fork in the banana.

Give the microwave a go by piercing the bananas all over with a fork or toothpick, putting the bananas on a plate in the microwave and nooking them in 30 second bursts until the flesh is soft.

What other pans can I bake this banana pineapple bread in?

You can bake this recipe in two muffins tins, resulting in about 24 muffins. However, keep in mind they won’t have a muffin-like texture, they will still resemble the loaf’s texture. This banana pineapple bread recipe can also be baked into six 5-3/4×3-inch mini loaf pans. Perfect for passing out loaves to friends and family! In general, keep in mind that both muffin and mini loaf sizes won’t need as long to bake as the regular loaf size.

I lightly greased my two loaf pans with butter and then a sprinkle of flour. My loaves came out perfectly. I also did 2- 8 oz cans of crushed pineapple. I drained one, the other I added the entire can with juice. (My husband had drained one for me already). I did use the cinnamon. I baked in a convention oven for 1 hour and 20 minutes. I put foil on top of the loaves at about an hour so the tops would not get too brown. They came out great! Interestingly enough the more the loaves sat out of the oven, the better they were. I would recommend letting them cool completely before cutting. I did get my loaves out of the pan immediately after getting out of the oven. They were very moist, however the longer they sat the less moist they were. We really enjoyed this recipe. They were even more tasty the second day. I am going to try adding the coconut and chocolate chip next. I love making this recipe it is so easy, so good, and very moist. I am constantly giving this receipe to people. This last time I made it I did not have flour or sugar in the house, so I substituted it with cake flour and confectioners sugar. It turned out just fine. I also forgot the recipe calls for 8 oz of crushed pineapple I accidently put 20 oz. Whoops but it still turned out fine, the original recipe the pineapple tends to get lost up against the banana but with the 20 oz. you can definetly taste both. I cooked this recipe according to directions, however the bottom of the bread stuck to the pan. I've recently heard you should put a piece of parchment paper or waxed paper in the bottom of the pan even if you have greased and floured it to prevent sticking. I have been making a recipe just like this one for over a decade. I've even left the pineapple out and altered the recipe with 1 cup oil and 1/2 cup water. also vanilla is 1 1/2 teaspoons.
