Lemon chess pie is a classic southern dessert that\u2019s made of a few pantry staples which bake up into a gorgeously rich pie. The creamy, citrusy pie has a smooth texture with bright, fresh lemon notes. It\u2019s so easy to whip up and bake\u2014and you might even already have all the ingredients on hand!<\/p>\n
Preheat the oven to 350\u00b0F. Unroll the crust into a 9-inch pie plate, and flute the edges.<\/p>\n Editor\u2019s Tip:<\/em> Get fancy with your fluting, and learn how to make decorative pie crusts<\/a>.<\/p>\n In a large bowl, use a hand mixer or stand mixer and beat the eggs for three minutes. Gradually add the sugar, and beat until the mixture becomes thick and lemon-colored, about two minutes.<\/p>\n Beat in the lemon juice, butter, cornmeal, flour and salt until well combined. Pour the pie filling into the crust.<\/p>\n Bake the pie until a knife inserted in the center comes out clean, 35 to 40 minutes. If desired, garnish with a light dusting of confectioners’ sugar.<\/p>\n Lemon chess pie should be stored in the refrigerator. After it has cooled to room temperature, cover the pie, and place it in the refrigerator until ready to serve. Lemon chess pie will keep in the fridge for up to three to four days.<\/p>\n You can also freeze this pie, but it\u2019s best to freeze it as individual slices. To do so, allow the lemon chess pie to cool to room temperature, then slice the pie into individual slices. Wrap each piece in storage wrap and then foil, and place in an airtight container.
