I was so excited making this for the first time, the kitchen smelled great when it was slow cooking. What a disappointment though when we ate dinner. No taste, very bland... I even double checked the recipe afterward to make sure I did everything as described. I was quite nervous about trying out this recipe for our staff lunch, as the reviews show varying opinions. However, it turned out great, and I got many compliments from my coworkers!<\/p>
I did make some adjustments, though. I used less potatoes, and added some carrots. I used the full can of coconut milk. On top of the spices mentioned in the recipe, I added 1 tsp red curry paste and 1 tsp garam masala. <\/p>
Because I made this for a larger group of people, I actually used 8 chicken breasts (cut in pieces) and 4 batches of sauce, and that was just perfect.
