I used apple cider instead of apple juice, some marjoram for added flavor (just a dash or two), chicken tenderloins instead of thighs, added an extra garlic clove and some celery. I also let the chicken simmer in chicken broth before adding it to the crockpot. After about 4 hours of cooking I felt like the stew didn't have enough flavor, and I had the random thought to add about 1\/4 tsp of unsweetened cocoa powder. Wow, what a difference! This was very good...I didn't realize until I was starting the 'shred' process that I had used boneless thighs...would the bones have added to the flavor?? I have made this recipe for my family MANY times since I found it! It's economical to make with the chicken thighs - I had never cooked with them before and thought I might not like them, I was sooo wrong! Being on a budget, I thought I would try this out, and make some revisions with what I had handy. If you are worried about it not having enough flavor, try the cocoa, and do not skip the apricots. I served it with rice, and my toddler gobbled it up. :)<\/p>","CommentId":27,"DateRated":"10\/12\/2011 16:18","GUID":"e164ddd95d294c5ab5ffa441f12412b1","MemberId":4935108,"Rating":4,"ScreenName":"rburtons","SubmittedDate":"10\/12\/2011 16:18"},{"Comment":"

I've made this recipe over and over again. I do not use the slow cooker however. I saute the onion and carrots in a little butter until tender. Then I and all the other ingredients (leaving the apricots and already cooked chicken for the end) and I let it boil down. Very good family meal. Healthy and perfect in the slow cooker. I added celery and served over rice. Wonder how it would taste with curry? This is one I will serve to company. The apple juice, cinnamon and apricots seem odd, but together they work perfectly. They add just a bit of sweetness to the dish and agree with other reviewers...do not skip the apricots! For convenience, I used boneless skinless chicken thighs. It should also work with boneless skinless chicken breasts for a leaner version.<\/p>","CommentId":31,"DateRated":"10\/01\/2011 21:34","GUID":"cb29f78536194c76a111d017d1858920","MemberId":2720564,"Rating":5,"ScreenName":"diannekendall","SubmittedDate":"10\/01\/2011 21:34"},{"Comment":"
