I really wanted to make this but didn't have the right ingredients. And I didn't want to run to the store. So, I improvised. I had frozen \"cooked\" shrimp. I saut\u00e9ed some shallots and garlic in avocado oil. I added the shrimp for just a minute or two, with salt and lemon pepper. To the saucepan I deglazed with white wine, added the lemon, chicken broth and basil. added the broth with corn starch, simmered a minute, then added the shrimp back and the chopped spinach. Finished with a squeeze of fresh lemon, chopped fresh basil and parmigiana. After all is said and done, this was soo good! Using the precooked shrimp led to overcooked shrimp, even though I tried my best not to.
