I took my seriously expensive cut of beef (I didn't realize how expensive this cut of beef was) and seared it in a cast iron pan on all sides. Then I took it off the heat, added half a stick of butter, minced garlic, and fresh thyme to the cast iron and tossed it in the oven at 425\u00b0. Every few minutes I basted the meat and let it cook until about 120\u00b0 internal temperature. Afterwards, I let it rest on a spoon on my cutting board to stop the cooking process. From there, I created a roux (butter and flour) and used a tasty red wine to get all the bits from the cast iron, added the roux, and created a gravy. Incredibly tasty and I thank you for the inspiration, but the way this recipe is written it would not have come out as good as this.
