I consider this recipe to be a true find! It is perfectly moist. I don't keep yogurt on hand, so I substitute buttermilk.<\/p>
I've found Z from our garden to be moister than Z from the market. Instead of shredding, I put the Z [peeled and chunked] in my blender for 4 pulses, then lightly blot with paper towels. I don't \"wring\" the moisture out.<\/p>
The frosting in this recipe is ok, but I prefer a fudge or cream cheese chocolate frosting.<\/p>
It is definitely more like a cake, so I use it as my German Chocolate Cake recipe paired with the standard coconut pecan frosting. Instead of baking in a 9x13, I use a porcelain square baker [50-53 mins] for a thicker cake.
