I WILL be making this again! It was delicious. I was forced to make a couple of very small changes to adapt to what I had available: I had only 14 egg yolks, so i reduced the liquids by an equivilent amount; I had no caramel extract so I used Madagascar Bourbon Pure Vanilla Ext. The dish took longer to cook - almost 10 minutes but that could be attributed to the fact that my baking dish was slightly smaller than 9x13. It was lovely and creamy with that perfect crispy sugar topping - Oh, I used natural turbinado sugar for that part, not the sugars listed in the recipe. I didn't measure but I'm sure it was less than the total of 2\/3c. in the recipe. Thanks for this recipe post. I love this recipe! It's a clever way to make creme brulee for a crowd. I made it for a New Year's Eve party, and it was a hit. I replaced the caramel extract with a good vanilla. My first Creme Brulee, and it was so easy and worthy of a repeat! I did alter the recipe just a bit so it was a little more economical to prepare. I used 1 quart of whipping cream and 1 pint of half & half. I did not have caramel flavoring, so substituted butter rum and next time will only use 2 tsp, as I thought it was a bit strong. But making a 9x13\" pan makes preparing this decadent dessert a snap and it serves a lot without the need of individual ramekins. I sliced it with a knife and served it with a spatula and it came out of the dish easily.
