I loved it. Toasting the quinoa brought out the nuttiness and sweetness and reduced the earthiness just enough to make it actually delicious. I toasted for the full 7 minutes. I replaced almonds with hemp hearts and almond milk with oat milk and skipped the vanilla. FYI, the simmer needs to be pretty high (as in medium low heat), rather than a low simmer. This will probably become a staple for me. We love this new to us cereal. I used my mesh strainer for rinsing the quinoa and it worked perfectly. I suggest using a low boil instead of a simmer for cooking this dish. It will take about 25-30 minutes at a low boil. I was out of almonds so used pecans. Worked perfectly.
