SUPER DELISH! The one reviewer who said this is bad either has weird taste buds or did something wrong. MODS: I used around 1lb of chicken tenders (bc it's what I had on hand), a can of chopped tomatoes instead of fresh, and I added about 4oz of frozen spinach at the end. In response to the reviewers who said it was watery, after the last step of pressure-cooking on low for 3 minutes, I allowed the pressure to naturally release for 25 minutes, then opened and served. No spice adjustments necessary! Just added some cotija cheese and parsley on top. Delicious!! I agree with another reviewer that this isn't particularly quick (took me over an hour, incl cook time).
