This is a variation of Mississippi pot roast and always makes a delicious meal. I usually cut the recipe in half and we still have enough for two meals. The longer you cook the roast, the more tender it gets and falls apart. This is my family's favorite way to have pot roast. I typically add 2 \u00bd - 3 cups chopped and peeled potatoes (2 inches in size), 2 \u00bd - 3 cups chopped and peeled carrots, and a chopped onion to the bottom of the crockpot, placing the roast on top and then the seasonings.
