I found my double boiler is the best thing to use to keep the chocolate at a consistently warmer temperature so the chocolate is thin enough to make it easier to dip the clusters. These were a huge hit! I sprinkled shredded sweetened coconut on half of them right after they were dipped in the chocolate. Nice add on but maybe a bit much as they were fairly sweet as prepared. Next time I'm going to try subbing out the pecans for Spanish peanuts (more sweet and salty as I'm a sucker for that flavor combination!).
