Nothing says “Tex-Mex comfort meal” like cream cheese chicken enchiladas. Blanketed in a creamy, well-seasoned sauce, enveloped in tortillas and topped with mounds of cheese (plus fresh herbs and salsa, if you really want to get serious), these enchiladas are just the thing to eat when you need the food equivalent of a warm hug. Here’s how to make them.

Preheat the oven to 350°F. In a large bowl, beat the cream cheese, water, onion powder, cumin, salt and pepper until smooth. Stir in the chicken.

Place 1/4 cup of the chicken mixture down the center of each tortilla. Roll up and place seam side down in two greased 13×9 baking dishes. In a large bowl, combine the soup, sour cream, milk and chiles; pour over the enchiladas.

Bake, uncovered, for about 30 to 40 minutes or until heated through. Sprinkle with cheese; bake for five minutes longer or until the cheese is completely melted.

Cover the pan of enchiladas tightly with foil and store in the refrigerator. They’ll last for up to two days when stored properly.

Yes. Tightly wrap the pan with plastic wrap and foil, making sure to seal the edges to prevent freezer burn. Chicken and cream cheese enchiladas will last for up to three months in the freezer.

It depends on the recipe. Some call for covering to ensure the enchiladas are completely heated through. However, creamy chicken enchiladas are not covered, which allows the edges of the rolled enchiladas to crisp up.

Enchilada sauce typically consists of chili powder that has been cooked in broth with additional seasonings, garlic and tomato paste or sauce and then thickened with a bit of flour. (If you want to make your own from scratch, try this enchilada sauce recipe.)

Try making your own substitute for enchilada sauce! For every cup of enchilada sauce, combine 1 cup of crushed tomatoes, 2 teaspoons of chili powder, 1/2 to 1 teaspoon of garlic powder, 1/2 to 1 teaspoon of onion powder, 1 teaspoon of dried oregano, 1 teaspoon of ground cumin and a pinch or two of cayenne pepper. For a different color and flavor, you can also use green tomatillo sauce, which mimics green enchilada sauce.

My daughter has the best sour cream and cream cheese chicken enchiladas recipe I’ve ever tried. I’m a pretty good cook and love to find recipes that I can customize to my families taste bud desires. My married to a Latino man who loves his ethnic foods but also loves some of my midwestern recipes as well as simple comforter foods so finding a recipe like this is perfect as is or with a tweak if needed. Cheese enchiladas are very soft and saucy just like this recipe so I find it great just this way considering the ingredients. Read your ingredient list and amounts and adjust to your texture preferences prior to preparation but don’t downgrade a great recipe that is so versatile and good. I watch out for certain healthy choices at times and adjust as needed but some days hot and creamy hits the spot with simple ingredients. Not all recipes adjust to personal preferences as well as this recipe does but common sense ingredients such as cream cheese, cream soup, milk and cheese is a smooth creamy sauce with no spicy ingredients so there should be no disappointment. If you want it add it, be daring to create as others do. Keep posting these type of recipes that can satisfy as comfort food or can be adjusted for a jazzy taste bud. I love the opportunity to be creative and inspired by other who post their creativity. I just did a round roll without tucking in edges as shown in the video. I used raw onion which I grated instead of powder and since we both are not a fan of chiles left them out. I might add a jar of mushrooms to replace the chiles next time. I forgot to grease the baking dish but fortunately nothing stuck. I served it with Vigo Mexican Rice which was a great combination. I cooked down a whole chicken and shredded it, then used that. The only modification I made with the recipe was I added minced jalapenos in the cream cheese, and I used hot green chilis instead of mild in the sauce. It turned out great. It made 14 fat enchiladas and the sauce amount was perfect. The good thing about enchiladas is there are hundreds of ways to make them. With chicken I usually make a verde sauce, but I needed something less time consuming. I had seen this recipe some time ago but was dubious because of the cream cheese. I had never heard of cream cheese in enchiladas. Well, I asked around and it turns out it's not so uncommon, so I thought I'd try it. Creamy Chicken Enchiladas Tips

Should enchiladas be covered while baking?

It depends on the recipe. These enchiladas are not covered, which helps crisp up the edges of the rolled enchiladas. Some recipes call for covering to ensure the enchiladas are completely heated through. It’s always best to follow the recipe instructions.

What is enchilada sauce?

Enchilada sauce typically consists of chili powder that has been cooked in broth with additional seasonings, garlic and tomato paste or sauce, then thickened with a bit of flour. If you want to make your own from scratch, try this enchilada sauce recipe.

What can you substitute for enchilada sauce?

Try making your own substitute for enchilada sauce! For every cup of enchilada sauce, combine 1 cup crushed tomatoes, 2 teaspoons chili powder, ½-1 teaspoon garlic powder, ½-1 teaspoon onion powder, 1 teaspoon dried oregano, 1 teaspoon ground cumin and a pinch or two of cayenne pepper.

For a different color and flavor, you can also swap out the enchilada sauce with green tomatillo sauce, which mimics green enchilada sauce.

Should I use flour or corn tortillas for enchiladas?

Either flour or corn tortillas work for enchiladas! Corn tortillas are traditionally used when making enchiladas. When making enchiladas with corn tortillas, the tortillas are usually fried lightly before filling and rolling to keep them crispy. However, flour tortillas make assembly easy because they are softer and more flexible.
My daughter has the best sour cream and cream cheese chicken enchiladas recipe I've ever tried.
