I had friends coming over last minute for dinner and I saw this recipe and decided to try it and it was fabulous. My guests thought I spent a ton of time in the kitchen preparing this delicious dish! I did not have the ginger root but used garlic instead and it was great, I made extra sauce and marinated the chicken pieces before cooking, it was so good! Thanks for this great recipe, it is easy to mix up the ingredients, using different veggies and chicken pieces. The was an amazing recipe! I doubled the recipe. Not very tangy to us, I added half a spoonful of Chile garlic paste. I'll add a whole spoonful next time. I used Trader Joe's Sriracha which is pretty mild. I used regular soy sauce and omitted the extra salt. Will definitely make again.
