This frozen burrito recipe is the ultimate solution for meal prep. Seasoned beef, hearty beans and melted cheese come together in a tortilla to create a satisfying and flavorful dish that’s easy to make and store. These freezer burritos are convenient and versatile—just pull one out, heat it up and you’ve got a delicious meal ready in minutes. Perfect for a busy weeknight or when you want to stock your freezer with ready-to-go options, this is meal prep at its best.

In a large skillet, cook the ground beef and finely chopped onion over medium heat. Break the meat into crumbles as it cooks, stirring frequently until the beef is browned and no longer pink, about five to seven minutes. Drain any excess fat from the skillet.

Stir the salsa and taco seasoning into the cooked beef mixture. Bring the mixture to a boil over medium heat and then reduce the heat and let it simmer uncovered for two to three minutes. Transfer the mixture to a large bowl and set aside.

In a food processor, combine the drained pinto beans and water. Process until the beans are almost smooth but still slightly textured. Stir the bean mixture into the beef mixture and mix in the shredded cheddar cheese until everything is well combined.

Spoon about 1/2 cup of the beef and bean mixture down the center of each warmed tortilla. Fold the sides of the tortilla over the filling and then fold the bottom and top edges to fully enclose it. Roll each burrito up tightly.

The best way to store these burritos is to wrap each one individually in waxed paper followed by a layer of foil. This double wrap helps prevent freezer burn and keeps them fresh for up to one month. When you’re ready to eat, just remove the waxed paper and foil and then microwave them for a quick and easy meal.

To freeze, wrap each burrito first in waxed paper, then in foil, and freeze for up to one month.

To reheat a frozen burrito, remove the waxed paper and foil. Place the burrito on a microwave-safe plate and microwave on high for two minutes 30 seconds, turning it over halfway through to ensure even heating. Let it stand for 20 seconds before eating to allow the heat to distribute fully.

Yes, you can bake the burritos. Preheat your oven to 375°F, remove the waxed paper and place the foil-wrapped burritos on a baking sheet. Bake for 25 to 30 minutes or until heated through. For a crispy finish, remove the foil during the last five minutes of baking.

Absolutely! Adding cooked rice to the filling will make the burritos heartier. Stir in 1/2 to 1 cup of cooked rice when you mix the beans and cheese into the beef mixture.

Make sure the filling isn’t too wet to keep your burritos from getting soggy. Simmer the salsa and beef mixture long enough to reduce excess liquid and avoid overfilling the tortillas.

For a complete meal, there are plenty of great sides to serve with burritos. Guacamole makes perfect accompaniment, adding creaminess and freshness. For something more substantial, a black bean salad brings extra fiber and color to the plate. For a fun option, you can’t go wrong with Mexican street corn (elote), grilled and topped with mayo, cheese and chili powder.

I love burritos, but the frozen ones are high in salt and chemicals. I also only used about 1/2 cup of cheese and it was perfect. Everything melded together just right and the flavor of each ingredient was able to come out. Adding the salsa was a great idea..I also blended that up separate to get rid of chunks and make it smooth. These did not make it to the freezer lol. I suggest doubling the meat and then using both cans of beans then more cheese. Also great tip on shells..I decided to brush olive oil on one side and toss them on the griddle at about 275 degrees for about 2 minutes or until they start raising up or brown. The one side gets crisp while the other stays soft. yummmmmy

@context":"http://schema.org/","@type":"Rating
{"@context":"http://schema.org/","@type":"Review
2019-03-01
@context":"http://schema.org/","@type":"Person
GoldGrapes
These sound wonderful, but I do not have a microwave. My filling didn't turn out like the picture above. Our filling was a lot more mushy/goopy. Maybe I processed the pinto beans too long? I had used Goya's "Pinto Beans in Sauce (Olive Oil, Cilantro, & Tomato)" because it's what I had in the pantry. I thought it would be fine since I was rinsing and draining them anyway, and it would add extra flavor. Maybe it made the pinto portion too thin though. Next time I will make as-written and see how it turns out. I thought it was still very good, but would have enjoyed less of a mushy texture. I think it would be good to add in more vegetables or maybe some rice. We enjoyed these enough that I'll try this again with some of my own tweaks.
