As a professional pastry chef, I wish Taste Recipes would monitor the \u201creviews\u201d better. Giving an amaretti recipe one star because it didn\u2019t rise is unfair and inaccurate. For those of you who had problems, I don\u2019t know why, but suspect it\u2019s because you over-mixed. No, amaretti DO NOT contain leaveners and should not rise at all beyond what lift egg whites give. If they turned out hard, you over-mixed and over-baked. If the dough is runny, your measurements are incorrect - I use this as my go-to recipe and it\u2019s a standard, reliable one. I occasionally need to add a bit more almond flour to my own housemade almond paste if the weather is humid or damp. It\u2019s possible wetter or stale, dried out paste could be a problem with the store-bought paste in cookies which did not turn out - or bakers used marzipan, not almond paste. Also not sure why someone would hold back stars because of how they think almond paste is packaged; and yes, it DOES come in packaging of several different weights. Grocery stores are not the only place to but it, and purchasing online is usually much more economical - I buy five pound cans if I need more than a few pounds at a time for much less an ounce than the small grocery-sold packages cost. They\u2019re easily found online.
