I made this for a potluck and turned out really well. I made just a half recipe and it filled a 13\" oval platter. I did use just one tub (8oz) of whipped Greek cream cheese and that was plenty. I also used the Thai sweet chili sauce that others recommended. Substituted Tamari for the soy sauce to make it gluten free. I completely forgot to buy the peanuts, but I did have some roasted salted garbanzo beans which I roughly chopped and threw on top. I made this for a potluck. As others suggested I added Thai Sweet Chili sauce in addition to the sweet and sour for the marinade. Added carrot matchsticks and used iceberg lettuce instead of spinach for more crunch. I used rotisserie chicken and cubed for ease of dipping. Had a half sheet cookie sheet and used almost 2 tubs of whipped cream cheese, didn't measure anything else. DELICIOUS but eaters didn't understand it was a dip and just spooned it onto plates and ate alone. Because I was going to be frying and then reheating the egg rolls, I salt brined the chicken overnight before cooking. I then took other's suggestions and doubled the marinade for the shredded chicken. For my egg roll filling I did the marinated chicken, green onions, spinach, carrots, sweet & sour dipping sauce. Tasting them, they were good but it felt like something was missing and it definitely needs some modifications for me to make it again. I would absolutely salt brine overnight again- there was a noticeable difference in the taste of the chicken. I wouldn't marinate the chicken all day again- instead I would cube it and cook with a bagged coleslaw mix- my egg roll cheat! I would mix in the marinade, modified as follows: low sodium soy sauce, toasted sesame oil, grated ginger and ground black pepper. (Omit the garlic entirely, it adds nothing in my opinion) I would then mix a full 12 oz of sweet & sour sauce and the green onions with softened cream cheese (if I'm doing egg rolls or wontons I like to use whipped cream cheese vs. block- so much easier to mix) and then add the chicken, veggies and add in the chopped baby spinach- the flavor profile is well suited to raw spinach vs. cooked. Love this recipe!!! Made it for my bunco group and it got rave reviews with many requesting the recipe. Note that it does make a lot! I used a fairly large platter and the 3 packages of cream cheese still made a very thick first layer (and firm since it was refrigerated), to the point it was a bit challenging to "dip" or dish out, even with a small spreading knife. Switching to whipped cream cheese as suggested by "The Wine Fairy" might be a good alternative? Using only 2 cream cheese packages and a very large platter (like SandiJ24 suggested) is another thought. This recipe is definitely a winner! A few changes that I would make:<\/p>
1. I would use whipped cream cheese instead of regular.<\/p>
2. I thought the sweet and sour sauce needed a kick, so I mixed some peanut sauce, some teriyaki sauce, a little soy sauce, garlic and a little sesame oil into it.<\/p>

This dip is fabulous!!! I have made it for a few different occasions and it is always a big hit. I call it my Chinese Taco Dip. It is something different from the traditional taco dips. I use extra sweet and sour sauce on the top. I have tried it with several rice crackers and thin crakers and it all seems to work well. Trader Joes make a great Sweet Chili sauce that I use. They also have delicious sesame crackers (Savory Thins) that compliment this dip.<\/p>
I layer the sour cream, chicken, spinach, peanuts, chives, then chili sauce.<\/p>

This was just okay. There wasn't any wow factor here at all. My son loves appetizers and this did sound really good so I tried it on Christmas Eve. I made this to audition for a graduation open house and tried it out on my husband and 6 kids. My graduating senior asked me to make about 4 trays of this for her party-it was THAT good! This was an easy dip to put together and most of the prep can be done ahead of time, so it's a winner recipe for taste and ease of prep for parties. I made this for a potluck. Everyone was asking me for the recipe. I modified the recipe by not adding p-nuts because some people had allergies, and I cooked the chicken myself (it is cheaper this way) I just cooked the chicken in a pan with olive oil, soy, garlic and cajun seasoning.
