I put the onion, garlic and chipotle peppers along with the sauce into my small food chopper and finely chopped all that good stuff together. I added all that to the oil in the pan along with 1/2 of a seeded jalape?o pepper (only canned tomatoes I buy are petite-diced) for some more spice. Salted all that until the onion was tender, then pretty much followed the rest of the recipe. I did take cherikzalger's suggestion and added some lime juice just before serving. This turned out amazing. I made it in the slow cooker. We like it spicy so I added an extra pepper and extra garlic. It definitely gave it the kick I wanted. The adobo flavor is outstanding. I didn't serve this with sour cream or cilantro. I will be making this again, but will likely use one can of black beans and one can of pintos next time.

We loved it! Great flavor for canned ingredients. I even cheated with the chicken on this one. I bought frozen chicken (Tyson) southwest flavor. This was incredibly easy to prepare and wonderful to eat. Next time will substitute black beans; neither DH nor I cared for the pinto beans in this dish. Other than that minor flaw, outstanding!

I had some leftover chipotles in adobo sauce from another recipe, and decided to try this out. It was perfectly spicy. I made this recipe on Sunday, October 12, 2014. Excellent! I doubled the recipe, except the pinto beans, kept the same amount and added 2 cans of black beans. I bought a rotisserie chicken, took the skin off, de-boned and cut up in chunks. We put a dab of sour cream in the first bowl, but we didn't really care for it. Today is Tuesday and we are eating the last of it. It got better each day! Made cornbread to go along with it.. Great meal on a cold Sunday. I went by the recipe and made cornbread to accompany this soup. My husband and I enjoyed the spice. My family agreed that this is even better than my Chicken Tortilla Soup recipe, which we love. Even my 6 & 10 yr olds ate it up. I used 1 can of black beans instead of the pinto beans. I put the cilantro in a separate bowl for those of us who do like it. You could use diced tomatoes with green chilies if you can't find the chipotle peppers in adobo sauce or fire roasted tomatoes, but it would definitely alter that delicious smokey flavor. I made this soup for a lunch group that I am a member of and everyone loved it! They all asked for the recipe. My teenage boys loved it also. I did make a few changes. I doubled the chicken broth and added another cup of cubed chicken breast. (it was still VERY thick). It is rather spicy, but not to much. Will be making this again.

This soup was excellent! I didn't think the chipotle pepper was too hot....it just gave the soup a nice smokey heat.

This soup was a big hit with us and our friends. I left a few seeds in as well as adding 1 tsp more Chipotle sauce. This was very good! SOUP-ERB!!!! This is easy/tasty/quick to make etc. etc. It also lends itself very well to substitutions of all kinds - I didn't have the V8 juice so used pasta sauce with some water, also subsituted pinto beans for black. A flavorful, hearty soup! I will admit to making one change, though, as I'm not much of a chipotle fan: I used about a tablespoon of chopped, canned chipotle peppers, and then used chopped green chiles for the remainder of the portion. I'm heavy-handed with the cilantro, as that is a family favorite. Thanks for sharing, Sonali!
