I was really intrigued by this tart due to the cornmeal and buttermilk in the crust--and it really did not disappoint. Both of those ingredients added extra flavor to the dough that paired really well with the fruit. My substitution was to use all black raspberries in place of the blueberry-blackberry mix; and I lessened the amount of sugar in both the crust and filling, since I don't like things overly sweet. That turned out beautifully, and is so incredibly delicious! A couple tips to help prevent a soggy crust: 1) since you're using an egg wash for the outside of the tart anyway, use a bit of it on the inside of the dough where you plan to put the fruit. Just brush a thin layer of the egg wash on after rolling out the dough, then pile the fruit on top of that. It sort of \"seals\" the crust and prevents the fruit juice from leaching into it. 2) Bake your tart on the lowest oven rack. This allows the bottom of the tart to set up more quickly and be less likely to absorb any moisture from the fruit. I followed both of these things and ended up with a perfectly baked tart from this recipe. I will absolutely make this tart again, and can't wait to try it with other fruit as well!
