2nd time making this. First time I followed directions, used canned sauerkraut and drained and rinsed. It was good. Read reviews and suggestions so this time I used the \"fresh\" bagged sauerkraut from deli, scooped out with slotted spoon, no rinsing. Actually added some of the juice to the mixture. I made this using a 1 lb roll Walmart\u2019s Great Value Hot Sausage and a can of sauerkraut. I only used 1 green pepper plus the onion. I served on sandwich sized sections of French bread that I sliced open, buttered and toasted on a griddle. I melted the cheese on top of the toasted bread under the broiler before spooning on the mixture. Provolone for me, pepper jack for the wife. They were so delicious! I was doubtful when I taste tested, but as a sandwich with cheese it was delicious Kinda shocked given how simple they are. Well... it turns out that my husband and our neighbor across the street thought the taste was good but the overall mixture was dry (I got reports the next day upon inquiry). I can't really argue with them on that. From one of the other reviewers, I used the idea of thousand island dressing and that was perfect from my husband's standpoint on the leftover night. I've ate a bit more for lunch a couple of days with mustard on half a bun (and cheese) and it was fine but I now am not sure I'll ever make again. Oh well, I was very hopeful that first night! The taste is good but the dryness detracts.<\/p>

Previous review: YUM! I wouldn't make something if it didn't sound good from the recipe (and from the reviews) so I was hopeful this would be good! But it's different enough from what I usually make that I wasn't sure. Delicious! I ended up using nearly twice as much sausage and a bit of chopped celery. Also, drained but didn't rinse the sauerkraut, and added some red pepper flakes and a few shakes of basil and oregano. (I had used 1 lb of hot Italian sausage and 1 lb of ground sausage). The pretzel buns (which I'd never heard of!) were perfect!!! I put a dab of stone ground mustard on the bottom bun, loaded those things up, topped with some pepper jack cheese, put in the oven....and fabulous! Shared with our across the street neighbor as we often do (and he shares with us) and he also thought it was excellent! I made this recipe to use up some of our homemade breakfast sausage, and it was fantastic! I used fermented cabbage that we make and split the cheese between top and bottoms. The pretzel rolls really give this dish a kick.
