Couscous is very healthy unless you are a diabetic or Gluten Free\/Celiacs. Couscous is high in fiber as long as you choose a whole wheat variety and excellent source of selenium which helps boost immune function. It is also high in plant based protein, containing 6 grams of protein per cup. You can google nutrition info on couscous and read for yourself. Having said that, I am gluten free so I substituted quinoa for the couscous. I found this recipe to be absolutely delish! Great refreshing, summer salad. I brought this to a pot luck and everyone loved it! This will become a staple in my home.
