These are delicious and easy to make! I hadn't eaten beets in decades and I was surprised at how much I loved these. This is a good way to eat yams too. I may have baked them too long, but using olive oil, while tasty, doesn't hold up to high heat and can lead to burning. So mine were starting to burn but still tasted good. I used garlic infused olive oil and sprinkled in some \"Mrs. Dash\" salt substitute with the salt and pepper for extra herb flavor. I didn't make the sauce because I wanted to keep the calorie count down, but it would enhance the flavor. If you bake them long enough, they are crispy. I will reheat leftovers in the air fryer. This will probably help with crispiness too.<\/p>
