I had breasts instead of thighs. I butterflied them, rubbed them with oil and liberally seasoned them with salt, pepper, dried lemon peel, poultry seasoning, fresh rosemary, garlic and onion powders. Then put the lemon ON TOP not under. Then sliced my potatoes and liberally seasoned them with all the same things as the chicken. Tossed the potatoes and almost a whole pint of cherry tomatoes on top of the chicken. What the heck are 8 tomatoes going to do for this dish? I put it in a baking pan since I didn't have an iron skillet big enough and covered it with foil and baked at 375 for 45 minutes. Then removed the foil and turned up the heat to 425 for 15 more minutes to crisp the potatoes a bit. Once done I poured all the juices from the pan into a skillet, added marsala wine, garlic, a little bit of lemon juice, more fresh rosemary and thickened it with some corn starch for a nice little sauce to put on top when serving.
