My family loved this recipe! I think its especially kid friendly because of the inclusion of ripe pineapple. I often don't follow recipes to a T and did spice it up a little with additional chili powder, black pepper, more salt and extra lime. I think I'd add a little coco aminos to the cauliflower rice next time for additional tang. I also included white rice in addition to the cauliflower rice. Next time I'll do coconut rice.
