The only thing about this recipe was the suggestion in TOH June\/July 2023 was to serve over mashed potatoes which didn't sound delicious. I cooked the beef with onions, green peppers, seasoning and enchilada sauce then at the end added mushrooms. Made into fajitas. A little too runny next time I will drain the meat and veggies. Most of my shredded meat recipes involve pork, so it was a pleasure to stumble onto this beef recipe. It's so easy to do and smells good while it's cooking in the slow cooker. Great over mashed potatoes, but also good over rice or noodles. I made this pretty much as written, but also didn't have the large size can of green enchilada sauce so used the smaller can plus a 4 oz can of undrained diced green chilis instead. The recipe was very easy and made beautiful, easy to shred beef. The meat was a little too sweet for my taste so I will cut the sugar next time I make it. I used it all in tacos so I had a lot of gravy left over (maybe should have drained that can of chilis?). I froze it and plan to use it as a base for chili or tortilla soup. Plan to try this again using my InstaPot.
