But. . . . in THIS recipe the bread is in chunks instead of slices. . . . and that may have been why THIS dish had an inconsistent texture for me (some bites were eggy and others not). Hard to say. I did read other reviews of stratas, and accepted the premise that the trick is to let the egg\/milk mixture soak in; I left mine in the fridge for the whole day (10 hours) before baking. Then I let it rest for plenty of time before serving, so that it wouldn't be a runny mess. It was O.K., but the texture of the bread\/egg chunks was a little weird. I imagined the whole thing would be more cohesive and moist. Turned out to be an expensive vegetarian dish. Risky to make for company, because not everyone will go for eggy chunks of bread with their vegetables. If I had to make it again, I would probably try dried herbs & less expensive cheese; my guess is that it would still be good.
