As soon as I saw this recipe I decided to make it for Thanksgiving. Always try a new dish for my vegan son and this fit the bill. It was absolutely delicious! Only changes I made were 1\/2 T sugar instead of 1\/2 c, omitted salt, used 3 t dried parsley and didn't bother to toast the walnuts. Next time I will omit the sugar entirely. Don't think I will miss it. I found it helpful to chop the celery, carrot and red onion the day before and also cook the rice then. Waited until the day I put it together to chop the apple so it wouldn't turn brown. It does make a lot! Used my largest Tupperware container and it filled it to the top. For just family and no company I will half it next time. There was something about the texture as well as the taste that was just so good! Thank you so much for sharing! This is already in more than one ToH folders and a recipe card. I don't want to lose it!
