They look messy and ridiculous, but I let my kids decorate them so that's probably why lol. We skipped the peppermint candy and just used festive sprinkles instead, as the peppermint in the cookie itself is divine and quite enough. <\/p> <\/p> Some things I changed: I read the reviews about them being dry, and I also live at a high altitude, so I added one extra egg, and that seemed to do the trick. The batter is cakey and moist. I also upped the sugar by about 1\/3c to balance the peppermint. For higher altitudes, up the baking temp to 390, and cut the baking soda by 1\/8tsp. Bake for only 9 minutes, tops. Avoid over-baking these at all costs and consider cutting the baking time by two minutes regardless of where you live. Take them off the tray no more than one minute after removing from the oven to preserve chewiness and avoid a crispy bottom layer. These would also be good rolled in powdered sugar before baking, to create a festive black\/white crinkle effect, but only if the batter is moist enough. Otherwise they'll dry out. I might try these again, but with marshmallow bits in the batter next time to avoid the hassle with the marshmallow cream and the melted chocolate. Don't fear the uneven disposition and crinkles, as that's what's supposed to happen.
