My wife and I really liked this soup but I think it needs a little tweaking. We both like spicy so I would add Hot sausage instead of mild and I would add a little more sugar and cut back to 1\/4 teaspoon of cinnamon. I agree with some of the other reviews that you can cut back to a 1\/4 cup of cornstarch because my first batch was too thick. I thought that the cheese and sausage would add enough salt but it was not enough for my taste so I am going to add at least 1 teaspoon during cooking time. Just WOW! Great flavor and texture. I forgot the sugar , but not going to add it. (I don\u2019t use a lot of sugar). I used my instant pot to make this - 6 minutes on high, NR after browning the sausage, onion and mushrooms. Added the cream, cheese and cornstarch mixture after release. I used venison sausage and added some red pepper flakes. Sending some with my husband to eat while hunting. <\/p>

This was terrific! Both my husband and adult daughter proclaimed this is their favorite soup of all the soups I make. Flavor is complex with all the spices. Because of preferences, I used skim milk instead of cream, (though I\u2019m sure cream would have been over the top!), brown instead of white sugar, 1\/4 tsp cinnamon, made my own Italian seasoning with oregano, rosemary, thyme, sage, basil, and parsley flakes, used about 1 cup of smoked Gouda, and didn\u2019t use the cornstarch slurry. I used sweet Italian sausage and of course that added its own spices as well, like anise. Very hearty with some warm crusty bread. It did take me about an hour to make, but I had some extra steps like deconstructing sausages and making my own Italian seasoning.
