This was a hit with my family....BUT, I thought the addition of fire roasted tomatoes (even though I like them) seemed not good for this recipe. But I am generally a recipe follower so I added them. When I tasted it...I HATED the mixed flavor of fire roasted tomatoes and butternut squash. This was very good and hearty as described. I did omit the tomatoes like other reviews. My only modification was: my grocer carries frozen mashed butternut squash in a 10oz package that was right next to the spinach. I used 2 packages, so much easier than having to bake, peel and mash! The squash was not very sweet so added maybe a tsp or 2 of sugar to sweeten it up a bit. Used mild Italian sausage, will probably try hot Italian next time.
