I cooked this in my 8 quart Instant Pot. I put 2 cups water in the bottom, added a trivet, then placed the frittata in a souffle dish on that. I covered the dish with a pan lid (foil would also work), then pressure cooked it for 25 minutes (I'm at high elevation, sea level would probably be 22 minutes). I did a quick pressure release, then let it cool for a few minutes before serving. Much faster. <\/p>
I used a cup of frozen hash browns in place of the whole potato, but next time will use cauliflower to reduce the carbs. I think some cooked ham or sausage would also be a great addition.
