SO GOOD! I did not add the shrimp, because I don't like it. I also did not have the quick cook brown rice on hand, but I did have some 15 minute rice blend on hand (wild, red, brown, basmati), so I used that. I was a tiny bit short on the rice, so I threw in a little orzo. Also, instead of the green pepper, I used a 12 oz bag of frozen okra. As per another reviewer suggestion I used Rotel Original Diced Tomatoes with Green Chiles (2 10oz cans + 1 8oz can tomato sauce) because that's what I had on hand. I used my homemade stash of Cajun seasoning and did double both that and the hot sauce. Also, I kind of did the cooking a little backward. In my large dutch oven I cooked the sausage, then took it out to cool and slice. In the drippings I cooked the onion with some cajun seasoning. Then I added all of the meat (chicken was already cooked; leftovers) with a little more seasoning and eventually everything else per the recipe. Once the rice was cooked, I transferred the dutch oven into my oven set on Keep Warm for about an hour so all the flavors could meld together. Quite tasty! I omitted the ham and increased the amounts of the sausage (I used turkey sausage), chicken, and shrimp (I bought precooked and added it after I cooked the rice with the meat and vegetables). I also cut the amount of Creole seasoning in half and omitted the hot sauce since my husband doesn't like spicy food (I then added hot sauce to my own serving). My husband and I (plus my brother-in-law who was on the receiving end of leftovers) loved this recipe. Also, the fact that it was a one-pot dish made the cooking and cleanup so easy.
