I made this as written, except I used pinto beans instead of black, and it was very, very good. We froze part of it to serve to his brother another time. Also, I always use Las Palmas Enchilada Sauce, which is by far the best. Using the rotisserie chicken from the store was time saving, but I like a little more chicken in my dishes. I will be making this again.
