Very nice flavor, mild, but flavorful. I did adjust it, though as the first time I made it, it was a bit bland (particularly the chicken). I added 1\/4 teaspoon each salt and pepper to the browning of the chicken step and then added an additional 1\/2 teaspoon salt with the rest of the seasonings. Such an easy no fuss dinner. I seasoned the chicken with a little of a Mexican spice mix (taco seasoning). After the chicken was mostly cooked I removed it and added chopped onions, green peppers, garlic to the pan. They softened and picked up the flavorings from the pan. I scraped them out and browned the rice. Added a can of drained corn, the green pepper and onion probably a tbsp of chili powder and 1\/2 Tbsp of cumin. Definitely added to the rotation. I will make again, but with several changes to the recipe. First off, I like a lot more chili powder and am not fond of cumin, so I will eliminate the cumin and increase the chili powder to 1 1\/2 teaspoon. Also, I like more salt and pepper so will increase both a bit. I think that instead of using onion powder I would like to add finely chopped fresh onion to the recipe and fresh diced tomatoes to replace the canned. Another suggestion is to use a black bean with some southwest or Mexican seasoning instead of a plain black bean variety.
