Sometimes, the tastiest salads are those with somewhat surprising and simple ingredients. Our creamy cucumber salad with Miracle Whip (also known as Kansas cucumber salad) is one such example and the recipe has been around for generations as proof. The combination of Miracle Whip, sugar, cider vinegar, dill and green onions makes cucumbers taste incredibly delicious. The sweet and tart flavors combine with the dill for a refreshing way to enjoy cucumbers. Read the reviews and you won’t be disappointed!

In a large bowl, combine the Miracle Whip, sugar, vinegar, dill and salt; mix well. Add the cucumbers and onions and toss to coat them. Cover the bowl and chill it for at least one hour.

Store the salad, covered, in the refrigerator. It will keep for up to five days. The moisture in the cucumbers may make the dressing seem thinner after a couple days; just stir to mix things up again and add 1 teaspoon or so of more Miracle Whip if necessary.

Absolutely! The flavors develop as you leave the dish in the fridge and hints of dill seep into the Miracle Whip. This recipe is best on the day you make it so it can be made in the morning and enjoyed later in the day or the next day. Keep it covered in the refrigerator until serving time.

Sure. Substitute sour cream for half the miracle whip for a version that’s less sweet and more tangy. Plain Greek yogurt is another option.

Yes. The flavor may be just a little different due to the spices such as garlic and paprika in the Miracle Whip. Use any brand of mayonnaise you prefer or even make homemade mayonnaise.

Absolutely! If you don’t have green onions on hand feel free to substitute chopped red, white or yellow onions. Thin strips of red onion look lovely in this salad and are delicious for those that enjoy onions.

Cucumber salad with Miracle Whip, or Kansas
