Made this cake today for my DIL birthday. Fun to make and even better to eat. And so pretty. I left out the nuts. I added coconut extract to the batter. The cake itself seemed to turn out okay but the icing just kept slipping off to the dish. To make the icing, I brought the sugar and water up to 245 deg. before slowly pouring it into the foamy egg whites but then I had a terrible time getting \"stiff\" peaks. After about 15 minutes of beating, the peaks were there but the icing was quite liquid-y and even in the fridge, it kept rolling off the cake.
