When it comes to quiche, there are no set rules for when and how to eat it. Quiche can be breakfast, lunch or dinner, a dish served warm, at room temperature or even cold. Any way you slice it, quiche is delicious. Thankfully it’s also easy enough to make at home with this spinach bacon quiche recipe.

The beauty of most quiche recipes is their simplicity. A flaky, buttery crust is filled with a savory egg custard and any assortment of vegetables, meats and cheese, then the dish is baked. Our recipe requires little effort, especially when you use a refrigerated pie crust, frozen spinach and even pre-shredded cheese. Of course, you can use homemade everything if you have time.

Preheat the oven to 400°F. Unroll the pie crust, and place it in a 9-inch pie plate. Flute the edges. In a large bowl, beat the eggs until frothy. Mix in the milk, 1 cup cheese, onion, bacon, salt, mustard and paprika. Add the spinach, then pour the filling into the pie crust. Even out the fillings, then sprinkle the top with the remaining cheese.

Editor’s Tip: If you want to really show off your presentation skills, learn how to make a decorative pie crust.

Bake the quiche until a knife inserted halfway between the center and the edge comes out clean, about 40 minutes.

Editor’s Tip: It’s important to let the quiche sit before slicing it so the filling sets properly. Remove the quiche from the oven, and allow it to sit for 10 minutes before cutting into it.

Quiche can be stored in an airtight container or wrapped tightly in the fridge for up to five days. You can also freeze it if you prefer. Once cooled, wrap the whole quiche or individual pieces tightly to avoid freezer burn. It will last in the freezer for up to three months.

Quiche is a great dish to make ahead. You can make it a day ahead and store in the fridge, or make it farther ahead and freeze it to save yourself time. Reheat from frozen in a 350° oven until it’s completely warmed through.

Spinach, or any greens for that matter, should be cooked before adding to quiche. You want to get the moisture out so it doesn’t create a runny filling or soggy crust.

To get a fluffy quiche, make sure your eggs are room temperature, and make sure you give them a really good whisk before adding the other ingredients. You can even pulse them in the blender for a second, which will help your quiche get that fluffy texture we love.

As versatile as quiche is, you can serve a lot of different dishes with spinach bacon quiche. Enjoy it with a nice green salad, a bowl of vegetable soup or some roasted potatoes. If you’re having it for breakfast, try it with this copycat Starbucks toasted vanilla oat milk shaken espresso!

Serve this spinach bacon The tender leaves cook while the quiche sets up. Another tip? If your pie plate is bigger (or smaller) than a standard pie plate, just use 1 egg for every 1/2 cup milk, half and half, or cream and you can increase the amount of filling so it fills your pieplate. First, it would not fit in my 9" pie crust. I ended up throwing out the crust and putting the mixture in a deep dish 10" pie plate with the hopes I could turn it into a crustless quiche. The middle never did set. (I did drain and press out the spinach). Ended up having to call for pizza delivery.

I used frozen spinach and the whole thing turned out watery. Definitely not the quiche texture and even with a cup of cheese, I still felt like I couldn't taste it. Disappointed.

deep dish pie crust. It was so runny and soupy that even after baking it for a hour at 400 degrees it still wasn't completely set in the middle. This did not please my hungry family.
Please retest this recipe because the milk mixture is not right and the frozen spinach amount is way too much!

Only used 1-1/2 cups milk, added 1/4 teas. of cayenne, pre-baked the pie crust. Yum! Note: Spinach must be dry! Squeeze out the liquid in a triple layered paper towel. If you simply drain spinach, you have a soggy mess!

This recipe makes way too much filling for a 9 inch pastry shell. Even after I had to throw away about a half cup of the mixture, it was still overflowing and made a gigantic mess. It hasn't finished cooking yet, but I won't make it again due to the mess. Perhaps if only half the spinach was used it would be better.

It's even better with fresh leaves of spinach added to the eggs and cheese mixture. The tender leaves cook while the quiche sets up. Another tip? If your pie plate is bigger (or smaller) than a standard pie plate, just use 1 egg for every 1/2 cup milk, half and half, or cream and you can increase the amount of filling so it fills your pieplate. I used an empty pieplate and filled it with water to judge how much filling it would take.

Best Quiche Recipe!!
