I have made this dish quit a few times and we love it. I use a whole red pepper and no green pepper and I always use 1 lb of farmer type sausage either Italian or garlic. I precook it in the oven or BBQ and cut it up into small pieces. I really like that there is no pasta and no canned soup in this. A nice change from the usual casseroles. I must be missing something. I've read the recipe and the reviews several times. No clue what maxi is talking about, midwifecat is right, not all that many veggies in this-during garden season I need to use a LOT of vegetables :) -<\/p>

1\/2 medium sweet red pepper,<\/p>
4 to 5 medium tomatoes<\/p>
1 10 ounces frozen corn,<\/p>
2 tablespoons minced fresh parsley<\/p>
1 teaspoon dried basil - I look on this as a drop in the bucket veggie wise.<\/p>
I went with fresh basil, added 2 onions, another tomato and 2 cups of fresh okra. I used 1\/2 lb.ground sausage, which I crumbled and pre-cooked, then drained well<\/p>
